A new year, a fresh start and an even fresher salad…
This recipe is a celebration of elegant simplicity. The rich, salty, creamy nature of the feta is wonderfully complimented by the sweet, crunchy juiciness of the watermelon while the mint plays its role as a gentle fragrant hummm to finish off the bite.
Make this salad as a light lunch, a snack, a back-to-school lunchbox treat or side dish at a braai. It’s sure become a family favourite!
You’ll need:
- A quarter watermelon cut into cubes
- 3 – 4 wheels feta also cut into cubes
- A handful fresh mint leaves – I like to chop half and keep the other half as whole leaves for garnish
- A splash of quality olive oil
- A few twists of freshly ground black pepper
